Well, well, well…I made a discovery last week, thanks to my sister-in-law, and being the public-spirited person I am, I’m passing this little jewel on. As usual, I’m not sure if I’m cutting edge, or the last to know. Just in case anyone out there hasn’t heard of Cookie Butter…well, you might want to start dieting right now to accommodate the cravings.
Unbelievably, I must admit, Nutella has a serious rival in my heart. I found a new love. Not chocolate, surprisingly, but delicious and just sweet enough to satisfy…grab a spoon and have taste of Trader Joe’s Cookie Butter. (If you don’t have a Trader Joe’s in your area, you can order this through Amazon.) You can spread it on anything: bread, fruit, waffles, spouse, pancakes, your fingers or a spoon…I bought one jar, and now that I’m far away from a Trader Joe’s store, I see my mistake. Should have bought a case. And so I can fit into my clothes, after this little discovery, I’m walking just a wee bit more these days.
If you don’t live near a Trader Joe’s, you can make your own version. I haven’t tried this myself, (haven’t tried it yet, I’m sure I’ll be whipping this up soon…we’ll see how long my one jar supply lasts) but it looks about right, based on the list of ingredients on the label.
Speculoos Cookie Butter Recipe
Ingredients:
3/4 sleeve Biscoff cookies (about 24 cookies)
1 Tablespoon sugar
1/2 teaspoon vanilla extract
1/4 cup coconut oil
a pinch of salt
1/2 teaspoon cinnamon
2 teaspoons canola oil
1 Tablespoon skim milk
Directions:
Grind the cookies into a fine meal using a food processor. Melt the coconut fat and let cool down until luke warm. Add coconut oil to the cookie meal and process until combined. Then add sugar, vanilla, cinnamon, salt, canola oil and milk. Process until combined, scraping the sides as needed. This could take up to 5 minutes, but stop whenever you reach your desired consistency. Play around with the oil or milk amounts if you still want it creamier.
This spread will harden in the fridge and it is best to let it stand 30 min at room temperature when serving.

That sounds AMAZING! And very very dangerous … I’m guessing that shop is only in America, and can’t decide if thats a good thing or a bad thing.

Yes, Cookie Butter is delicious! And as far as I know, Trader Joe’s is only to be found in the US…you can order Cookie Butter from Amazon..if they ship to your country. But that’s why I included a recipe in the blog. A lot of people in the US don’t live near a Trader Joe’s, and may have to make their own version, if they want to try this taste. I don’t have that store in my area, and can only get to one when I visit my daughter or sister-in-law. Give it a try, and I hope you’ll enjoy! ~ Sheila

I don’t live near a Trader Joes’s – thankfully! I’m already imagining stuffing this between two butter cookies or vanilla wafers like sandwich cookies.

Well, you can always order from Amazon! Or try the recipe. I haven’t made it yet, but I’m sure sooner or later I’ll get desperate and give it a try. I can only get to a TJ’s when we’re visiting our daughter in Seattle or one of our siblings in CA, so I’ll probably run out of my small stash before I can snag another jar or dozen 🙂 ~ Sheila

It is yumminess on a spoon! We don’t have a TJ near us either. Never have, but I’ve enjoyed checking them out when we visit family living near one of the stores. They are a lot like a Whole Foods or Wild Oats if you know either of those stores. Mostly I’m intrigued by the unusual items you can find. ~ Sheila

I think Trader Joe’s is mostly a West Coast chain. That’s where I’ve found them. They have a lot of organic/natural/whole foods…and they are pricey. But fun to check out, and they do stock some unusual items. Fun to explore if you get a chance! ~ Sheila

Well (perhaps unfortunately) I DO live not far from a Trader Joe’s. Now I’m trying to decide if I’m brave enough to try this….not sure I can handle the temptation!

Oh I hope you give it a try, and let me know how it turns out. I haven’t tried it myself yet. I’m still working on the jar of cookie butter I brought home. After I ate and shared about half the contents of the jar, I’ve gotten a little more careful and am now in save mode…I don’t want to eat what’s left too quickly…still have a while to go before we’re out again! ~ Sheila
